Black Bean Fritters

I LOVE black beans, and during Summer time, whenever there is a BBQ, I try to always make chickpea burgers, black bean burgers or just buy "Morningstar Farm" Veggie Burgers, which by the way are delicious, and DO NOT taste like cardboard ("Morningstar Farm" has the BEST Vegetarian stuff!)...Okay, so back to black beans.

The black bean fritters idea originated from the black bean burgers. I wanted something similar, but quick, easy and bite sized. So this is what I did:

I drained a can of black beans, and in a bowl, combined it with salt, pepper, minced garlic and seasoning to taste. I mashed it with a fork (you can also a potato masher) until the consistency was like a chunky paste. I then combined it with sweet baby peas, corn and red onions. I scooped it out in to spoon size amount and made in to small patties.


In a frying pan, melt a little bit of butter. Then fry each side of the patties for 4-5 minutes. Once you are done, you can serve it with a roasted red pepper sauce or tomato sauce.
These cute little bean fritters can be served as a simple appetizer.
