Manicotti-Italian for "sleeves", is a pasta shaped in large sized tubes. It's an Italian dish typically stuffed with ground meat or cheese. Though a lot of Italian pasta dishes are made with some sort of meat product--ex. spaghetti and meat balls, Bucatini all'Amatriciana (pasta with pancetta and tomato sauce), beef raviloi--I wanted to stuff my manicotti with veggies:
I thawed a bag of frozen vegetables in a homemade garlic sauce. When they were tender enough I added fresh mozzarella cheese and stirred until it was all completely combined. In this case the cheese acted like glue to keep the veggies together, making it easy to stuff.
After they were stuffed, I placed the manicotti in a oven safe flat dish and covered them in a traditional tomato sauce, then sprinkled some mozzarella cheese on top. I placed it in the oven for 20-25 minutes and soon enjoyed it with a simple side salad. Buon Appetito!
